I love cooking this type of food and want to entice others to enjoy less meat-based products, not only to help our planet but also our own health. I cooked and sold vegetarian and wholefood meals at the Country Market (WI) for a year but this didn’t fulfil the whole vision because I wanted to give those with disabilities the chance of work experience in a friendly economic environment. When Long Furlong committee agreed to a lunch time cafe once a month, Blue Sky Eco Cafe was born. Friends came to the rescue to launch the first lunch in June 2018. Since then we have served between 30-40 people each month.
